Awesome Sauce

Fruit Reduction & Preservative Blend

Ingredients

Qty Unit Ingredient Notes
8 oz. Fruit / Berry of choice Fresh is preferred
18 oz. Fruit / Berry preserves See "Technical Note on Preserves" at bottom
2 1/2 Tbsp. Lemon juice  
4 Tbsp. Honey  

Blackberry Example

8 oz. Blackberries
18 oz. Blackberry preserves
2 1/2 Tbsp. Lemon juice
4 Tbsp. Honey

Preparation Protocol

  1. Prep:
    Clean fruit/berries. Remove Stems, leaves, etc.
    Thoroughly rinse each berry. (with love dammit!)
  2. Heat:
    Put everything in a pan on low-medium (~3) to medium-low (~4).
  3. Simmer:
    Bring to simmer/boil (nothing ridiculous, we don't want to burn it).
  4. Therapy time:
    Simmer until the sauce gets thick enough to coat the back of a spoon
    [I usually just do 10 - 15 minutes].
    I like to squish the berries, with a spatula, while I'm waiting.
    It's therapeutic?
  5. Extraction:
    Reduce heat (go from 4-3 or 3-2, etc.) and remove from heat.
    Leave burner on.
    Now's a good time to use an immersion blender if you want to get all the juice.
  6. Strain:
    Pass through a fine-mesh colander into a bowl to remove seeds and pulp.
    Wipe the pan clean (ensure it's bone-dry!).
    Water is your enemy; it will break the sauce.
    Return the strained liquid to the pan.
  7. The Final Reduction:
    Continue to simmer to reduce sauce to desired consistency.
    Be aware: Sauce will continue to thicken while cooling.
    Reduce the sauce to a thinner consistency than you actually want.
  8. Bottle:
    Remove from heat and let cool for 5 - 10 minutes.
    Pour into a Condiment Squeeze Bottle (use a funnel... don't be a hero).
  9. Chill & Enjoy:
    Place in refrigerator to cool and enjoy your creation!

Technical Note on Preserves:

Jam or Jelly can be used instead of preserves.

• Preserves are best for the ideal texture.

• Jam works a little better than Jelly.

• Jelly is a last resort.

Total Yield: Approximately 16 - 20 oz.
