Cantaloupe Bread

Ingredients

Wet

3       eggs 
1      C.oil 
2      C.sugar 
3      tsp.vanilla 
1       cantaloupepureed (about 2 cups)

Dry

3      C.flour 
1      tsp.salt 
1      tsp.baking soda 
3/4      tsp.baking powder 
2      tsp.cinnamon 
1/2      tsp.ginger 

Optional

1      C.nutschopped

Instructions

  1. Beat first 5 ingredients together.
  2. Add all other ingredients except nuts.
  3. Mix well.
  4. Add nuts. (if using)
  5. Bake in greased pans for 1 hour (for large loaves) at 350°.
    3 small loaf pans = 45 minutes
    2 standard loaf pans = 1 hour
