Instructions

  1. Combine:
    • Dump the base chili ingredients (and the optional heat additions, if using) all into a crockpot.
  2. Cook low and slow:
    • Cook for as long as possible at as low a temperature as possible.
    • Low for 6+ hours is ideal, but High for 2 hours would work in a pinch.
    • Cooked on High for 1 hour without beans, it's… OK.
  3. Optional steak addition (for a "fancy" chili):
    1. Cut steak into 1/2-inch or smaller cubes.
    2. Cook steak, using oil, in small batches, and add to the pot.
    3. Add the adobo sauce for a spicier chili — just a small spoonful goes a long, long way.

Notes:

* Red kidney beans: can be left out if you don't like beans — since there's no other liquid and no beans, the net effect on consistency is about the same.

** French onion soup: can be pureed in a blender first if you don't like chunks of onion.
